Chardonnay is the one varietal that is produced in a widest range of styles. We always want to be in the middle of that range, producing a wine that has beautiful fruit and complexity, with sufficient acidity to balance any richness. The primary factors in this are cool climate fruit, barrel fermentation in a low percentage of new barrels, and a partial malolactic fermentation.
